SOUTHERN GIN COCKTAIL.

2 Dashes Curaçao.

2 Dashes Orange Bitters.

1 Glass Dry Gin.

Shake well and strain into cocktail glass.

SOUTH SIDE COCKTAIL.

The Juice of ½ Lemon.

½ Tablespoonful of Powdered Sugar.

2 Sprigs Fresh Mint.

1 Glass Dry Gin.

Shake well and strain into medium size glass. Add dash of siphon soda water.

SOYER-AU-CHAMPAGNE COCKTAIL.

1 Liqueur Glass Ice Cream.

2 Dashes Maraschino.

2 Dashes Curaçao.

2 Dashes Brandy.

Stir well together in medium size glass and fill with Champagne. Add slice of pineapple or orange, 1 cherry or strawberry.

SPANISH TOWN COCKTAIL. (6 people)

5 Glasses Rum.

1 Dessertspoonful Curaçao.

Pour into shaker, add a large quantity of ice, and shake thoroughly. Grate a tittle nutmeg over each glass and serve.

SPECIAL ROUGH COCKTAIL.

1 Dash Absinthe.

½ Applejack (known in America as “Jersey Lightning ”).

½ Brandy.

Serve very cold.

SPENCER COCKTAIL.

1 Dash Angostura Bitters.

1 Dash Orange Juice.

⅓ Apricot Brandy.

⅔ Dry Gin.

Shake well and strain into cocktail glass Add a cherry and squeeze orange peel on top.

Very mellifluous: has a fine and rapid action: for morning work.

SPION KOP COCKTAIL.

½ French Vermouth.

½ Caperitif.

Stir well and strain into cocktail glass.

SPRING COCKTAIL. (6 people)

3 Glasses Gin.

1 Glass Quinquina.

1 Glass Bénédictine.

Before shaking add a dash of bitters and serve with an olive.

SPRING FEELING COCKTAIL.

¼ Lemon Juice.

¼ Green Chartreuse.

½ Plymouth Gin.

Shake well and strain into cocktail glass.
